Eldersburg, Maryland, May 6, 2024–(BUSINESS WIRE)–Students at the University of Florida returned from winter break to a large temporary 6,600-square-foot kitchen and dining structure built on one of the university's campuses. This building, “The Eatery,'' will serve students until the renovation of UFL Broward Hall is completed in fall 2024.
Mobile Kitchen Solutions, an Eldersburg, Maryland-based rental solutions and events division, delivered and constructed one of its signature temporary structures for a University of Florida client in December during winter break. The facility will provide all cooking, preparation, storage, serving and dining while UFL renovates one of its food and beverage outlets. RSE's team worked with the client several months in advance to plan deliverables and delivery dates, provide key equipment specifications, conduct on-site surveys, and conduct weekly status reports. “We posed every possible challenge to our team from the beginning of the process to opening,” F&B director Müller said in a follow-up email to MKS. “The team was not only very professional, but fun to work with.”
The climate-controlled structure is divided into two main areas by an internal walk-through divider. Double glazed doors provide access to the dining and buffet area. This area includes glass walls, decorations, signage, tables, chairs, and a buffet station. A separate entrance behind the buffet leads to the full-service kitchen. The kitchen consists of several small sections including a sink for prep and storage tasks, a full-service conveyor dishwasher, and a dry storage rack. RSE installed 40 feet of cable along one of the walls. Containerized temporary kitchen POD for convenient use of all gas cooking appliances, including double stack ovens, tilt skillets, and steamers. The unit is also equipped with lighting, a fire extinguishing system and an exhaust/make-up air hood, all of which meet the required standards for indoor cooking facilities. The kitchen area also has over 600 square feet of temporary refrigeration and freezing space built into the building's walls. This allows personnel to access the storage area without leaving the house.
MKS provided the necessary temporary cables, electrical distribution boxes, indoor plumbing and air conditioning all under one roof, with high level washable floors with stairs/ramps at each entrance.
Finally, MKS provided two premium standard restroom trailers and one ADA compliant restroom trailer.
Since moving into the new temporary cafeteria on January 5th, UFL has been able to continue serving meals to students without interruption. Both staff and students have provided positive feedback and will call this facility their canteen for the rest of the year.
