Hot, Chicken
I'm sure you've heard of Nashville Hot Chicken, it's a trendy food that I probably won't try. It's said to be hot enough to make even the toughest of people cry. I read a report about Popeyes' spicy chicken sandwich so I tried one. It was pretty tasty, but still too spicy for my taste.
Costco chicken is a bargain and pretty tasty, so I rarely cook it myself, except for casserole dishes. So I decided to make Jessica Seinfeld's (of course) Peach and Sriracha Chicken with Coconut Rice. You can find the recipe in the link, and it came out incredible. I followed her recipe closely, but I dialed back the spiciness a little since she likes it spicy. This one called for a tablespoon of Sriracha sauce, so I used that. It was spicy, but… Just right.
Speaking of heat, Mexico is experiencing a heat wave accompanied by drought. Meteor Blade's environmental collection here and here and Pakalolo's here cover this and other climate news. Here in California, there is a long-range weather blog called Weather West by Daniel Swain that is only updated about once a month, but has proven to be pretty accurate. The gist of his prediction is that the West Coast will be cool for most of the summer, while the rest of the world will experience extreme heat, with the entire country experiencing extreme heat in late summer, just in time for California's wildfire season. This prediction has proven accurate so far this year.

They're rare on the coast of California, but a must-have in the central part of the state. We added an air conditioner along with our new heater, but we only use it a few times a year.
