DICKINSONTOWN, N.Y. (WIVT/WBGH) — This month on In The Kitchen with CCE, we're looking at the first berries of the season.
Nutritionist Tara Kenyon makes these strawberry and avocado summer rolls with honey-lime dipping sauce, and says she chose the recipe as an example of how strawberries can be used in savory dishes.
It's strawberry season at local farm stands and pick-your-own berry patches, and Kenyon says locally ripened strawberries have much better flavor than the out-of-season berries you'll buy at the grocery store. They're also high in vitamin C, fiber, and folate.
“Strawberries are rich in antioxidants, especially anthocyanins, which are great for the heart and brain. Strawberries, like all berries, have a very low glycemic index, so they're a great choice for people with or near diabetes as they won't spike blood sugar like other fruits,” Kenyon says.
Kenyon chose her recipes from the new Markets of Broome Cookbook, which features recipes using ingredients available at local farmers markets.
The products are sold at all five of Broome's markets: the year-round regional market on Upper Front Street, seasonal markets in Vestal, Windsor and Northside in Endicott, and the new market at Rec Park in Binghamton.
