ORLANDO, Fla. — A popular breakfast dish from the Dominican Republic has become the namesake of a new Orlando eatery.
Los Tres Golpes is located on the north side of downtown Orlando, and through chance and social media, chef Stanley Salazar connected with two other men to bring New York to “The Beautiful City.”
“I just wanted a change,” Salazar said with a smile about his recent move to Orlando and starting a restaurant.
This week in Chef's Kitchen, we have two recipes: the first is a crustless, tostone-based pizza, the other a gooey, Harlem-inspired burger-esque dish.

Recipe #1: Los Tres Golpes Pizza
material
- 2 green plantains, cut into 1-inch pieces
- 3 tablespoons marinara sauce
- 1 pint mozzarella
- 3 ounces diced salami
- 3 ounces of cubed fried cheese
- 2 ounces mayonnaise-ketchup sauce (see below)
- 1 fried egg
Ingredients for Mayo Ketchup
- 6 ounces mayonnaise
- 6 ounces ketchup
- 1 ounce garlic
- 1 teaspoon adobo

- Mix the mayonnaise and ketchup ingredients together and set aside.
- Fry the green plantains for 3 minutes.
- Season the plantains and mash them to make a dough.
- Remove the plantain dough and make the pizza dough.
- Fry the plantain crust for 2 minutes.
- Remove crust from fryer.
- Add the marinara sauce and mozzarella and bake in the oven until the cheese is melted, about 2 minutes.
- The salami and cheese are fried and added to the pizza.
- Pour the mayonnaise and ketchup mixture on top and top with a fried egg.
Recipe #2: OG Chopped Cheese
material
- Black Angus beef 6 ounces
- 3 ounces American cheese
- 3 ounces of lettuce
- 4 tomato slices
- 2 ounces pickles
- 2 ounces sliced red onion
- 1 ounce garlic butter
- 1 10-inch loaf of bread
- Salt and pepper to taste
House Sauce Ingredients
- 6 ounces mayonnaise
- 3 ounces ketchup
- 2 ounces relish
- 2 ounces yellow mustard
direction
- Mix house sauce ingredients together and set aside.
- Cook Black Angus meat.
- Spread garlic butter on bread and toast.
- Add American cheese to the meat and shred it.
- Add the shredded meat to the pan and press until crisp and golden brown.
- The sandwich is topped with lettuce, tomato, onion, pickles and house sauce.
- Wrap the sandwich and cut it diagonally.
