What's better for a hearty meal than meatloaf? How about a meatloaf for one? This week we're giving the classic recipe a lighter, healthier twist. Ground turkey is the key to this not-too-heavy version.

- 1 pound ground turkey
- 1/4 cup Parmesan cheese
- 1/4 cup Italian bread crumbs
- 1/4 cup chili sauce (plus more for topping)
- 1-2 teaspoons Worcestershire sauce
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 egg
- salt
- pepper
direction
- Preheat oven to 350F.
- Finely chop the onion and garlic and sauté in olive oil until soft. Remove from heat and set aside.
- Place ground turkey in a large bowl and add sautéed onion, Worcestershire sauce, chili sauce, breadcrumbs, and Parmesan.
- Add eggs, salt, and pepper to turkey and mix.
- Next, spray a muffin tin, either jumbo or regular size, with cooking oil.
- Form the turkey mixture into balls that can be stuffed into muffin tins.
- Place in a 350F oven and bake for 45 minutes.
- After 30 minutes, pour the chili sauce over the meatloaf and return it to the oven for the remaining 15 minutes.
- Now you have mini meatloafs with crispy edges for everyone. Enjoy!
