Brookhaven entrepreneur wants to share a 'common language' with mobile commercial kitchen

Nathan Addison is well known in the Brookhaven area as a foodie. His regular social and media posts show off his prowess in both creating and displaying all kinds of edible masterpieces.
But Addison's goal isn't just to make food for herself and her online followers to enjoy. After months of preparation and planning, he announced the arrival of Addison's, a custom-built commercial kitchen on wheels.
“This is a huge 8 1/2 x 30 foot food trailer that allows me to deliver my unique food on multiple routes,” he wrote in a post announcing the business.
“I decided to start my journey with a mobile unit because it would allow me to lower overhead costs and introduce my cooking and passion to the public in a variety of ways, while also allowing me to reinvest in my next chapter of opening a brick-and-mortar restaurant. That was it,” Addison said. .
Addison said it will start by offering restaurant-quality, homemade meals weekly, with free delivery within a seven-mile radius on minimum orders. He has agreements with some retailers to stock the meals so that people outside of his delivery area can easily pick them up.
“With easy online ordering, you can see actual photos and descriptions of products available at great prices, saving you money and time on grocery shopping and feeding your family,” Addison says. said. “There are five options to choose from each week, and the options change each week.”
Food trailers will not be available for walk-up orders during meal preparation days. However, pop-ups for the public are also planned.
“I signed a contract with a location on Brookway Boulevard and Hwy. 51. I will announce on social media a few days in advance where I will be and pull out my trailer to set up,” he said. “The menu is limited but exciting and constantly changing to try new things.”
In the future, Addison said they will begin offering a “very unique on-site private fine dining” experience, offering a five-course restaurant experience. He also plans to offer catering services for weddings and other events.
Addison's custom trailers are expertly built and are estimated to take 8-12 weeks to complete.
“Once it arrives, the state has to do a final inspection and that's go-time,” he said.

“I have always loved cooking, creating, and learning new cuisines. The decision to enter the food industry was not easy, but it was a long-standing plan,” Addison said. “I'm at a point in my life where I'm willing to take this risk. If I don't do it now and pursue my dream, it may never come true.''
