Scratch Farm Kitchen started by hosting private dinners for about 40 people.
Owner Jamie Herson and former partner Kelsey Ledger leveraged Herson's experience on her family's farm in Duson to bring Herson's farm-to-table food to people's tables. And it started with a simple question about agriculture. What do you do with something you can harvest in bulk each season, like three bags of corn? Or 30 pounds of cucumbers?
Harrison recently spoke about his Scratch experience with Jan Swift on the Discover Lafayette podcast. You can listen to their conversation here.
“You basically build a food pantry as if you were living on the land,” says Herson. “Trade with your neighbors. I love the interaction between communities, producers, and families.”
The launch of a popular Lafayette restaurant has opened in a new location to accommodate its growing customer base. Their journey began with a pop-up at the Moncus Park Farmers Market, then a food truck, and then a store on the University of Louisiana at Lafayette campus.
Once on campus, students started posting photos of their meals on social media from scratch. And things started moving from there.
Now located in the Wynwood Shopping Center across Johnston Street from the original Farmers Market location, Scratch posts daily specials on a board next to the cash register. The menu includes hash-based and grit-based bowls, as well as boudini (biscuits topped with cheese, eggs, pesto, kimchi, and Jamie's homemade mayonnaise).
