So, how many other coffee shops are there around the Coastal Bend where you can sit down and enjoy a cup of coffee while the proprietor-owner puts on some music?
Yes, it happens at Airline Civet Cafe on the south side of Saigon city.
The kitchen officer asks Christian, “What is that civet? What does it represent? What does it mean? So, at the Saigon Civet Café, we treat civets as cats. This is a Southeast Asian cat breed. And he tends to eat coffee beans.''
The Civet has been importing coffee beans from Vietnam to Corpus Christi for three years.
But why Corpus Christi?
“We find that coffee consumption here is pretty high,” Christian said.
Civet has received perfect scores in the past, but this is the first time the kitchen cop has presented the sticker in public.
“Everything here should be original. Always clean. As soon as the customer leaves, get up and clean the place. That's the golden rule on the first day.”
