Cattivo, which means “bad boy” in Italian, is a 40-seat space with tables also available on the outdoor terrace and will be located in The Old Kennels on the edge of Cirencester Park.
Robinson is the founder of the Michelin-starred Harwood Arms in Fulham, The Forester of Stratford-upon-Avonand The Elder in Bath have teamed up with Baggott and Lawson-King, who co-own and run Roots + Seeds Kitchen Garden, also based at Old Kennels.
Cativo's menu features six classic 12-inch Neapolitan-style sourdough pizzas (two meat, two veggie, one fish and one seasonally changing pizza) made with locally sourced, foraged and home-grown ingredients, priced from £14 to £17.
Ingredients include honey from Robinson's own hives and homemade venison nduja, made from deer raised on the neighbouring Bathurst Farm.
Other locally sourced ingredients include fior di latte mozzarella from Glastonbury, foraged herbs and fresh produce from Roots + Seeds' quarter-acre kitchen garden on-site.
Cativo's pizza dough is made using specialist pizza flour from local mill Matthews Cotswold Flour and pizza chef Faluncesco Fortia bakes the pizzas in a wood-fired oven using dry-aged oak from Bathurst Estate.
There will also be two dips and two desserts: Nonna's Tiramisu and a panozzo (pizza sandwich) with Nutella, wood-roasted fig and peach, served with homemade Madagascar vanilla ice cream.
Drinks will include two pre-made bottled cocktails crafted in-house by Lawson-King – a spicy Margherita and an Old Fashioned – as well as Italian wines by the glass and bottle, locally brewed beers, ales and soft drinks.
“We're incredibly proud of what we've achieved in the 12 months since opening our restaurant and kitchen garden and are excited to be working with Mike Robinson on the next step in our hospitality journey. We can't wait to welcome locals and visitors from further afield to Cativo,” Mr Baggott said.
Baggott and Lawson-King started out by launching Scenic Supper, serving fine dining whilst maintaining social distancing in five greenhouses in the Cotswold fields, after the first Covid lockdown four years ago, before opening Roots and Seeds at Easter 2023. The restaurant uses fresh produce grown in its own garden and from suppliers within a 25-mile radius.
Cattivo will open on August 2nd.
