GAINESVILLE, Fla. (WCJB) – Feta Stuffed Shrimp is a crowd pleaser. This recipe can be prepared the day before and baked just before serving. Perfect to serve as an appetizer or as a buffet platter. Serve as a main course with a fresh salad. Enjoy!

- 1 pound shrimp with shells (about 16 shrimp)
- 1/2 cup breadcrumbs
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 2 tablespoons diced roasted red peppers
- 1 tablespoon fresh lemon juice
- 1 teaspoon minced garlic
- ½ teaspoon lemon zest
- 1 beaten egg yolk
- 7 tablespoons melted butter (divided)
- 1/3 cup dry white wine
- Cocktail sauce

- Preheat oven to 350°F.
- Coat a shallow baking dish with cooking spray.
- Peel the shrimp but leave the tails intact.
- With a sharp knife, make an incision into each shrimp, being careful not to cut all the way through. Wash the shrimp and gently flatten them on a clean surface.
- In a mixing bowl, mix together the breadcrumbs, crumbled feta, chopped parsley, diced roasted red peppers, lemon juice, minced garlic, lemon zest, beaten egg yolks, and 4 tablespoons melted butter.
- Spoon about 1 tablespoon of the breadcrumb mixture onto each butterfried shrimp, forming them as needed.
- Arrange stuffed shrimp in prepared baking dish.
- Pour the dry white wine and remaining 3 tablespoons melted butter around the shrimp in the baking dish.
- Bake until shrimp are pink and firm to the touch, about 15 minutes.
- Transfer stuffed shrimp to a plate and drizzle with pan juices and cocktail sauce.
