Lodge at Blue Sky launches new dining experience this summer called SmokewoodThe mobile food trailer will serve a rotating menu of “Texas-style craft barbecue” and “traditional Tex-Mex cuisine” at Gracie's Farm on Friday nights, according to a press release.
The Wanship farm and ranch facility offers smoked wood at the lodge from Father's Day weekend through Labor Day weekend and during the big summer holidays.
Park City native and Texas native David Williams founded Smokewood after retiring from a successful law career to become known as an author, stand-up comedian, and pitmaster.
This summer, Williams will prepare the Smokewood menu himself in a “high-end mobile kitchen” equipped with a wood-fired smoker. The smokewood mobile kitchen also features a custom wood-fired Santa Maria grill, allowing pitmasters to control cooking temperatures by turning a Texas-sized handwheel to raise and lower cooking grates.
Blue Sky's signature restaurant, Utah at The Lodge, has a curated drink menu, featuring house-made lemonades, High West Whiskey cocktails, margaritas, Mexican beers, and private label IPAs created for the Saving Gracie Equine Healing Foundation. There is a saving grace Gracie's beer offering.
The Texas-style craft barbecue menu includes barbecue platters and sandwiches, a la carte smoked meats, desserts and more. Tex-Mex (Fiesta Comida) cuisine includes quesadillas, tacos, enchiladas, tamales, and traditional sides and desserts.
