Aloha, fellow foodies! This week, Sam Choi and John Benelli make a special visit to the Hawaii Emergency Management Agency (HI-EMA) to deliver an important message: the importance of having a two-week stockpile of food and essentials in case of an emergency.
Emergencies can happen without warning, but that doesn't mean you have to give up on a good meal. Sam and John show you how you can create delicious meals from your pantry and fridge, even with limited ingredients.
Here's what I cooked:
1. Fried Spam This local favorite combines the flavors of Spam with fresh veggies and lots of flavor. It's quick, easy and satisfying!
2. Arroz Caldo (chicken porridge) Comfort in a bowl, arroz caldo is a Filipino-style dish made with chicken, rice, and ginger that's perfect when you need a warm, hearty meal.
3. Surf and Turf Patty Who would have thought you could combine canned tuna, corned beef, and sausage to create such a delicious patty? Packed with protein and flavor, this patty is the perfect emergency food source.
4. Eggplant and pumpkin stew This dish is a great way to use up veggies in your fridge, and the perfectly stewed eggplant and pumpkin make a delicious, nutritious side or main dish.
5. Uncle Sam's Refreshing Lemonade No meal is complete without a refreshing drink, and Uncle Sam's Lemonade is the perfect way to stay cool and hydrated, even when you're making do with what you have on hand.
Remember, preparedness doesn't mean sacrificing flavor. With a little creativity, you can turn emergency rations into gourmet meals. Listen to this episode of Sam Choy's in the Kitchen for tips, recipes, and lots of aloha spirit.
Stay safe, stay prepared, and as always, eat well!
