After two years of closure, Simone's Kitchen in Coxsackie plans to reopen with a community-centered celebration Wednesday at 2 p.m.
The Mediterranean restaurant, which also has a location in Schenectady, closed its original location in Coxsackie and renovated the space at 18 Hope Plaza. In addition to renovation work, the long-awaited reopening was delayed due to staff shortages.
“From Coxsackie to Greenville, from Ravena to the Catskills, we felt so much love and support for what we do that we will cherish it forever. .This place has become home,'' said owner Bashir Chedrawi.
On Wednesday, all proceeds from sales will be donated to local organizations such as the Coxsackie Food Pantry and Greene County Community Action.
Then, the same night from 7:30 to 11 p.m., the celebration continues at the Wire Event Center, 60 S. River St., with a party featuring food, drinks, music and door prizes.
Simone's first opened in April 2018, serving meals inspired by the school lunches Chedrawie's mother used to pack. It is based on vegetables and grains, topped with a protein source, and garnished with various vegetables.
