From Tuesday 9 July, embark on a culinary journey through the aromatic world of truffles this winter at Maude Kitchen & Bar at Four Seasons Hotel Sydney.
Executive Chef Francesco Mannelli and his team have created an extensive menu of winter favourites using the freshest ingredients in season, with a selection of standout dishes accented with the luxurious aroma of black truffle, a seasonal ingredient.
For light snacks or sharing dishes, try the chef's speciality courgette flowers with buffalo ricotta and peas (AUD34) or the vegetarian tagliatelle “ripiene” (AUD48), both of which can be generously garnished with shaved black truffles for extra flavour and umami (AUD20 per plate, on request).
For the more adventurous, the generous 180g Filet Rossini with foie gras, morels and flavoursome truffle jus (AUD 78) is the perfect warming winter indulgence, while for the ultimate indulgence, the daily special of Risotto Acquerello with fresh black truffles (AUD 60) is recommended.

And for diners wanting to indulge in a true Italian truffle fest, Mode Kitchen & Bar will open on August 8, 2024. Sagra: Wine and Truffle Festival, A vibrant market-style restaurant serving up signature truffle dishes with animated live stations.
The essence of tradition SagraNamed after the Italian word “Peter” meaning festival or fair, the restaurant will collaborate with Mode Kitchen & Bar's Executive Chef Francesco Mannelli, internationally recognized, award-winning chefs Luca Ciano (celebrity chef, TV presenter and author), Andrea Accordi (Executive Chef at Four Seasons Hotel Bangkok), Enrico Maritan (Head Chef at Riva Four Seasons Hotel Bangkok) and Enrico Sgarbossa (pizza master and consultant) to showcase their culinary talents for an evening of convivial, fun-filled and seasonal feasting.
To further enhance the atmosphere SagraYou'll also be serenaded by a Sydney-based accordion duo. According to us, Featuring iconic songs from Dean Martin, Renato Carosone, Pino Daniele and more.
This one-night-only event will feature five unique live stations.
Appetizers and pasta: Try the rich gnocco fritto and tagliatelle, infused with truffles and finished with Parmesan cheese.
pizza: Take a bite of our handmade pizza crust topped with creamy Brie and dark truffles – a match made in heaven.
Risotto and Wagyu beef: Enjoy a rich risotto with black truffle and hazelnuts alongside oyster blades, black truffle and egg yolk emulsion at the Wagyu Mayura Station.
Second & Side: Enjoy juicy Wagyu beef rump with polenta and fagioli al fiasco with truffles
dessert: Boasting the ultimate in sweetness and savoury flavours, nothing is more authentically Italian than tiramisu topped with delicate shavings of black truffle.
Paired with premium Italian wines carefully selected by sommeliers Aman Vicona (Mode Kitchen & Bar, Four Seasons Hotel Sydney) and Piero Fonseca (The Standard Wine), the evening will be the perfect way to savor truffles in an intimate Italian setting.
