Tabei Atkins, an 18-year-old yoga teacher and visionary vegan chef, is moving his beloved vegan food truck, Tabei's Mindful Kitchen, to the beautiful island of Maui, Hawaii.

Tabay's Mindful Kitchen is known for its clever plant-based recreations of fast food favorites and home-cooked staples, and has a diverse following that appeals to vegans and non-vegans alike. Atkins now aims to delight Maui locals and visitors with innovative and appetizing plant-based products.
Bringing dreams to life: From concept to reality
“My family has been coming to Maui for generations,” Atkins said. “Having split my time between Maui and Orange County for the past five years, I have loved the island and its people. We became deeply connected and realized that the vegan options available here were limited, and we felt strongly that we wanted to change things up once a prime location became available. I thought it was time to bring it!”
After accepting Maui as their new home, Atkins and his mother, Sahel, have dedicated the past year to making this dream a reality. After at one point close to opening a brick-and-mortar restaurant, Food decided his truck was unique. Charm was the perfect medium for their culinary art. Tabay's Mindful Kitchen is scheduled to open June 1st in the bustling OGG food truck pod, conveniently located across from Costco in Kahului.

The truck will continue to feature fan favorites like delicious Mexican pizza and innovative Persian burgers, and of course new works inspired by local Hawaiian cuisine reimagined through Atkins' vegan lens. provided.
